Fiesta Salad Recipe




Wow...I need to stay on top of posting.  One of my goals was to post at least three times a week, so I need to get with the program. :)

I made another fun recipe this week that is very healthy...Fiesta Salad.  I took a low-fat vegetarian cooking class last month and this was one of our favorite recipes.  It makes a HUGE batch and you will get your veggies out of the way!  I didn't add the red pepper flakes or cayenne, but if you like spicy, you might like it.

Fiesta Salad

1 - 15 oz. can black beans (rinsed and drained)
2 cups frozen corn, thawed
2 large tomatoes, diced
Rinsed Butter beans (frozen)
Edame Beans (frozen)
1 large green pepper, diced
l large red or yellow pepper, diced
3/4 cup fresh cilantro, chopped
3/4 cup diced red onion
3 tbsp fresh-squeezed lime juice
2 tbsp. Hendrickson's Vinegar and Oil Dressing (very low fat and flavorful)
2 tbsp. apple cider vinegar OR Hendrickson's Vinegar and Oil Dressing
2 teaspoons cumin
1 teaspoon ground coriander
2 garlic cloves, chopped fine
1/2 teaspoon crushed red pepper flakes or a pinch of cayenne
1/2 teaspoon salt

1.  Combine the beans, corn, tomatoes, bell peppers, cilantro and onion in a large bowl.
2.  Whisk together the lemon juice, rice vinegar, apple cider vinegar, cumin, coriander, garlic, and crushed red pepper flakes in a small bolw.  Pour over the salad and toss gently until evenly distributed.
3. Store in a covered container in the refrigerator, leftover Fiesta Salad will keep up to 3 days.

Weight loss have been hovering about 3/4 of a pound a week. Sooooo slow, but at least it is a loss.  I have been going to the gym four times a week. Twice a week I do Pilates (LOVE) and twice a week I have been doing weights.  I also do the Nu-Step bike 45 min. each time.  I'm feeling and looking firmer, even if the weight isn't dropping off. 

I did break down and buy some new exercise wear...I will take pix and post later!
